The arrival of the Spanish on the island of Puerto Rico drastically changed the physical and cultural landscape. The gastronomy also changed, having to adapt to the new needs of the slaves brought from Africa who produced sugar cane from sunrise to sunset. Salted cod brought from Newfoundland, along with tubers, rice and beans, became one of the main foodstuffs. In conversation with Mónica Ocasio, an expert on Caribbean recipe books, this piece proposes a journey through the Internet’s gastronomic videos combining culinary, political and historical interests.
